OATMEAL BROWNIES 
2/3 c. sugar
1/3 c. water
3 tbsp. vegetable oil
1/2 tsp. vanilla extract
2 egg whites, lightly beaten
1/2 c. all purpose flour
1/3 c. quick cooking oats, uncooked
1/4 c. unsweetened cocoa
3/4 tsp. baking powder
1/8 tsp. salt
Vegetable cooking spray
1 tsp. sifted powdered sugar

Combine sugar, water, vegetable oil, and vanilla in a medium bowl; stir well. Add egg whites, and stir well. Combine flour and next 4 ingredients; add to sugar mixture, stirring well.

Pour batter into an 8 inch square baking pan coated with cooking spray. Bake at 350 degrees for 23 minutes or until wooden pick inserted in center comes out clean. Cool; sprinkle with sugar.

I added 1/2 tsp cinnamon and 1/2 cup each chocolate chips and dried blueberries to the batter. The brownies were chewy and delicious!
