ITALIAN FARINA CAKE 
4 c. milk
1 c. sugar
3/4 c. farina (or cream of wheat)
1 egg
Salt to taste
Almond extract
Lemon extract (extracts to taste)
Lemon rind, grated (if desired)

Mix farina, sugar, salt and milk; bring to a boil. Lower heat and cook slowly stirring constantly until thick. Cook for 15 minutes and add egg and extracts. Give a good beating and then pour into a greased cake pan or platter and let stand or set several hours until cold.

Take 2 eggs, beat them and have ready crushed soda cracker crumbs. Slice cold mixture into squares or diamonds; dip in egg mixture and roll in the cracker crumbs. Fry in 1/2 butter and 1/2 margarine until light brown being careful not to burn them. Very good.
