SPAETZLE 
2 c. flour
4 eggs
1 pinch white pepper
1 pinch salt
1 pinch nutmeg
1 c. water

Put flour in a bowl and add remaining ingredients. Whisk to form a smooth batter. To cook, force the dough through a pie pan with holes punched in it and into boiling salt water. Work quickly to get all of the dough into the water. Stir and cook for 5-7 minutes or until the spaetzle are firm.

Drain spaetzle and immerse them in ice water to stop the cooking and to firm them. When ready to serve, drain and saute in butter with salt, pepper and nutmeg. Serves 4.
