GRILLED CHEESY POTATOES | |
6 medium potatoes 1/4 tsp. salt 1/4 tsp. black pepper 1 tsp. parsley 2 cups grated cheddar cheese Wash potatoes cut in half lengthwise, boil until tender, drain and let cool. Scoop out the inside leaving a thin layer. Put the scooped potatoes in a medium bowl and mix all the remaining ingredients together. Fill all the potato halves with the mixture. Place potatoes directly on hot grill (outdoors) or on a baking sheet in a 350°F oven. Cook for about 15 minutes or until the cheese mixture seems soft and bubbly. Serve warm. Serves 6.
