CHICKEN CACCIATORE | |
2 lbs. chicken parts 1/2 med. green pepper, sliced 1/2 lg. onion, sliced 2 cloves garlic, minced 1 can (10 1/2 oz.) condensed tomato soup diluted with 1/4 c. water 1/4 c. dry red wine 1 tbsp. vinegar 1 tsp. crumbled oregano 1/4 tsp. salt substitute 1/4 tsp. pepper Brown chicken quickly under boiler. Place in large skillet along with remaining ingredients. Cover and simmer over low heat, stirring occasionally, 45 minutes or until chicken is tender. Makes 5 servings, about 250 calories each. |
