COCONUT SHORTBREAD COOKIES 
1 c. sugar
1 egg
1/2 tsp. salt
2 c. coconut
1 c. shortening
1 tsp. almond extract
1 1/2 c. all-purpose flour

Cream together the sugar, shortening, egg and almond extract. Add flour and salt, fold in coconut. Shape into 1 inch balls. Place on ungreased cookie sheet. Flatten with a fork. Bake at 325 degrees for 15-18 minutes until golden around edges.
