CINNAMON SPICED MUFFINS 
1 1/2 c. all-purpose flour
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. ground coriander
1/2 tsp. ground allspice
1/2 c. milk
1/3 c. butter, melted
1 egg
1/4 c. sugar
1 tsp. ground cinnamon
1/4 c. butter, melted

Preheat oven to 400 degrees. Grease 36 miniature muffin cups. Prepare batter as directed. Spoon into muffin cups. Bake 10 to 13 minutes or until edges are lightly browned and wooden pick inserted in center comes out clean. Remove from pan.

Meanwhile, combine remaining 1/4 cup sugar and cinnamon in a shallow dish. Roll warm muffins in remaining 1/4 cup melted butter, then sugar-cinnamon mixture. Serve warm. Makes 36 muffins.
