POOR MAN'S CAKE | |
1/2 lb. butter 1 3/4 c. sugar 1 c. water 3 c. self rising flour 8 egg whites 1 tsp. vanilla Cream butter and sugar, add flour and water a little at a time. Beat well. Fold in stiffly beaten egg whites and then add vanilla. Bake in 3 greased and floured 8 or 9 inch cake pans. Bake at 325 degrees for 25 to 30 minutes. Test for doneness. Ice middles and top. POOR MAN'S CAKE ICING: 1/2 lb. butter 8 egg yolks 2 c. sugar 1 c. raisins (white or black) 1 c. angel flake coconut 1 c. chopped nuts, medium (preferably pecans) Cream butter and sugar well. Add well beaten egg yolks. Cook in double boiler until very thick at least 15 minutes. Stir often and when done. Add fruits and nuts. Ice middles and top only of cake. |
