POACHED FISH 
Oleo
2 1/2 lbs. fish fillets
Salt and pepper
1/4 c. finely chopped onion
1 c. dry white wine or water

Lightly grease a shallow glass dish. Place fillets in dish. Sprinkle with salt and pepper to taste. Sprinkle with onions and pour liquid over fish.

Heat, covered tightly with clear plastic wrap, on FULL POWER 10 minutes or until fish flakes easily. Baste fish with liquid and onions several times during cooking.

Variation: tomato juice, chicken broth, clam juice.
