CORNMEAL MUFFINS 
1 c. flour
1 c. yellow cornmeal
1/3 c. sugar (omit if desired)
1 tbsp. baking powder
1 tsp. salt
2 tbsp. finely chopped onion
1 c. cream-style corn
1/2 c. mayonnaise
3 tbsp. vegetable oil
1 egg

In a large mixing bowl, combine flour, cornmeal, sugar, baking powder and salt. Add onion, corn, mayonnaise, oil and egg; stir just until dry ingredients are moistened. Fill greased or paper-lined muffin cups two-thirds full.

Bake at 400°F for 20 minutes.

Yield: 12 muffins.
