POTATOES MASHED WITH HORSERADISH
CREAM
 
4 or 6 potatoes
Salt
Pepper, freshly ground
Minced parsley
1 tbsp. butter
1/2 dairy sour cream
1 tbsp. horseradish
Melted butter

Boil potatoes until tender, drain. Sprinkle with salt, cover pan and shake until potatoes are mealy. Mash, adding butter and pepper, then add sour cream, horseradish and a little minced parsley. Whip as for mashed potatoes. Serve with melted butter on top. Very good with roasts.
