MACARONI AND CHEESE OR CHEESE
SPAGHETTI
 
1 1/2 c. elbow macaroni or 8 oz. spaghetti (to make Cheese Spaghetti)
5 tbsp. butter
3 tbsp. flour
1/2 tsp. salt
1/4 tsp. pepper
2 c. milk
1 c. Cheddar cheese or about 4 slices
paprika (on top; optional)

Cook macaroni in boiling water until tender and drain. Blend butter, flour, salt and pepper over low heat. Stir until thick and bubbly. Add cheese, stirring until cheese is melted, then stir into cooked macaroni. Pour into a greased 1 1/2-quart casserole dish. Sprinkle with paprika (optional) and bake for 30 to 35 minutes at 350°F. To make cheese spaghetti, use same cheese sauce, but boil spaghetti instead.
