ANDY'S FAVORITE MACARONI AND
CHEESE
 
2 c. cooked elbow macaroni
1/2 tsp. salt
1/4 tsp. pepper
1 lb. Velveeta cheese in sm. cubes
2 tbsp. butter
2 tbsp. flour
2 c. milk
butter for topping top of casserole

In microwave-safe bowl, combine 2 tablespoons butter and 2 tablespoons flour. Microwave on high for 1 minute. Stir to make a paste out of flour and butter. Add milk, stirring to mix. Microwave on high for 2 minutes. Stir and repeat until the sauce has thickened slightly and has a smooth consistency.

In an ungreased 2 quart casserole, layer 1/2 of the macaroni, 1/2 of the cheese, 1/2 of the seasonings. Repeat. Pour white sauce over these ingredients. Dot with butter. Cover and bake at 375 degrees for 30 minutes. Uncover and bake for 15 more minutes. 6-8 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
