TURKEY NOODLE DANDY 
2 c. cooked turkey; cut bite size or 1 lb. ground turkey, sauteed
4 c. egg noodles, cooked
2 c. turkey gravy or 1 c. gravy with 1 c. sour cream
1 c. frozen peas, uncooked
2 c. corn bread stuffing mix
4 tbsp. butter

Preheat oven to 350 degrees. Mix turkey and peas with gravy. Set aside. In a 9 x 13 inch baking dish or casserole, alternate turkey mixture with noodles. In a small fry pan, melt butter, remove from heat, add corn bread stuffing mix and gently stir to coat all crumbs with butter.

Sprinkle crumbs over top of turkey and noodles. Bake at 350 degrees for 35 minutes or until gravy is bubbly and crumb topping is nicely browned.

NOTE: This was always the last use of turkey leftovers at my mother's house. The listed ingredients are not set amounts. Mother always made the dish with whatever amounts were leftover.

My family likes this dish so much that I don't wait for leftover turkey, but make it with ground turkey.
