ABBY'S RICE PUDDING | |
2/3 c. uncooked white rice (long grain not instant) 3 c. boiling water 1/2 tsp. salt 1 can (14 oz.) Eagle Brand milk 1/2 c. raisins, optional 1/4 c. butter 1 tbsp. vanilla In top of double boiler, combine rice, boiling water and salt. Cook covered over medium heat about 40 minutes, until tender. Water in double boiler should be boiling, add more if needed; do not drain. Stir in sweetened milk and butter cook uncovered. Stir frequently until thickened about 20 minutes. Remove from heat. Add vanilla and raisins if desired. Serves 6-8. Tip: Rice should be cooked covered until tender. |
