ZUCCHINI BREAD 
3 eggs
1 1/2 c. sugar
1 c. oil (Crisco)
2 tsp. vanilla
3 c. zucchini, grated with skins, drain well
3 c. flour
3 tsp. cinnamon
2 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 c. walnuts
Coconut & raisins (opt.)

Beat together eggs, sugar, oil and vanilla. Add drained zucchini. Mix in remaining ingredients. Mix everything together. Makes 2 loaves. Bake at 325 degrees for 40 to 50 minutes.
