FRESH TOMATO SAUCE 
Italian plum tomatoes (enough to fill a 6-quart pot)
1 lg. onion
Basil
Garlic powder
Salt and pepper
2 tbsp. olive oil (optional)

Wash and quarter the plum tomatoes and add to pot. Slice the onion and add. Season to taste, using the basil and salt. Simmer for about 2 hours, stirring occasionally. Strain the mixture. Add garlic powder, sugar, salt and pepper to taste. Then add olive oil, if desired.
