APPLE CARROT MUFFINS 
1/2 c. instant milk, dry
3 tsp. baking powder
1/2 tsp. salt
1/2 tsp. allspice
1/2 tsp. nutmeg
1 tsp. cinnamon
2 1/2 c. whole wheat flour
1 c. honey
1 c. safflower oil
4 eggs
1 tsp. vanilla
1 c. grated apple
1 c. grated carrot

Preheat oven to 400 degrees. Combine milk, solids, baking powder, salt, allspice, nutmeg, cinnamon, and flour. Combine honey, oil, eggs, and stir into dry ingredients. Fold in apple and carrots. Spoon into oiled muffin tins or paper muffin cups. Bake 15-20 minutes.
