CARROT CAKE | |
2 c. grated carrots 1 c. chopped nuts 1 c. coarsely chopped apples 1 c. well-drained crushed pineapple 1 tsp. vanilla 3 c. plain flour 2 c. sugar 1 1/2 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 1 1/2 c. salad oil 3 eggs, lightly beaten Mix together carrots, nuts, apples, pineapple, and vanilla. Mix together all dry ingredients--flour, sugar, baking powder, soda, and salt. Add salad oil and eggs to flour mixture. Stir in fruit mixture. Bake 1 hour in greased and floured 9x13 inch pan at 350 degrees. |
