YOGURT BLUEBERRY MUFFINS 
1 c. flour
2 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1/2 c. brown sugar
1 tsp. vanilla
1/2 c. wheat germ
1/2 c. oat bran
1 c. plain yogurt
1 egg, beaten
1/2 c. oil
3/4 c. blueberries (fresh or frozen)

Sift together flour, baking powder, baking soda and salt. Stir in sugar, wheat germ and bran. In a separate bowl, combine yogurt, egg, oil and vanilla. Add liquid mixture to dry ingredients all at once. Stir only until combined, do not overmix. Fold in blueberries. Pour batter into greased muffin tins. Bake at 400 degrees for 35 minutes. Yield: 12.
