WESTERN POTATO SALAD 
2 lbs. cooked potatoes
4 hard boiled eggs
1 sm. onion, diced
Shredded lettuce
6-8 fried bacon strips & diced
Celery
1 sm. can drained kidney beans
2 diced tomatoes
Mayonnaise
Salt to taste
Pepper to taste

Cut up warm potatoes, eggs and add onion, lettuce and other ingredients in order, tomatoes last. Mix mayonnaise, salt and pepper for dressing. Can be served either warm or cold. Unusual but delicious. Serves 4 to 6.
