HIGH FIBER REFRIGERATOR MUFFINS 
2/3 c. whole bran cereal
1/3 c. oat bran
2/3 c. boiling water
1/2 c. skim milk
2 beaten egg whites
2 tbsp. cooking oil
1 1/2 c. all-purpose flour
1/4 c. packed brown sugar
1 1/2 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. salt

Stir together bran cereal and oat bran in boiling water. Stir in milk, egg whites and oil. In another bowl stir together flour, brown sugar, baking powder, cinnamon and salt; add to cereal mixture until just moistened. Can be stored in a covered container in the refrigerator for up to 1 week.

To Bake: Spray muffin cups with nonstick cooking spray. Fill muffin cups 2/3 full and bake at 400°F for 20 minutes or until a toothpick inserted comes out clean. Remove from pans.

Makes 12 muffins.
