MOM'S PANCAKES 
1 cup milk
2 eggs (or Egg Beaters)
2 tbsp. oil
2 tbsp. white vinegar
2 tsp. baking soda
1 cup plus 2 tbsp. all-purpose flour

Stir eggs into milk until yolks are broken and mixed well with milk. Add oil, vinegar and baking soda. Mix in flour, do not over mix.

Drop 1/4 cup mix onto griddle over medium high heat. Turn when top begins to bubble. Remove when bottoms are nicely brown.

Makes approximately 10 (4-inch) pancakes.
