CARROT PIE 
2 c. carrots, mashed
2 eggs, slightly beaten
1/2 c. sugar
1/2 tsp. cinnamon
1/8 tsp. nutmeg
1/2 tsp. salt
1 c. milk
1 pastry shell (with built up rim)

To carrots, add eggs, sugar, spices, salt and milk. Pour into pastry shell. Bake in oven at 450 degrees 10 minutes, reduce heat to 350 degrees and bake 25 minutes more. The pie should be firm like a custard pie.
