CARROT CAKE 
2 c. sugar
4 eggs
2 tsp. baking powder
1 1/3 c. cooking oil
2 c. flour
2 tsp. baking soda
2 tsp. cinnamon
4 c. carrots
3/4 c. broken walnuts

FROSTING:

8 oz. pkg. cream cheese
1/2 c. butter
1 tsp. vanilla
1 lb. confectioners' sugar

Beat all frosting ingredients together.

Preheat oven to 350 degrees. Beat sugar and eggs until thick. Stir in oil. Mix flour, soda, cinnamon and baking powder. Stir into egg mixture. Fold in carrots and walnuts. Pour in greased floured tube pan. Bake for 40 to 50 minutes on 325 degrees. After frosting cake garnish with carrots.
