LIMA BEAN CASSEROLE 
1 c. dried Lima beans
1 pinch or two of salt
1/2 c. chopped onions
1/2 c. diced celery
2 tbsp. chopped green peppers
2 tbsp. chopped canned green chilies
2 c. stewed tomatoes
1/2 tsp. chili powder

Cover beans with water; soak overnight. Drain, cover with fresh water, simmer until tender. Heat oven to 350 degrees. Add remaining ingredients, pour into a casserole dish and bake for approximately 40 minutes. Serves 4 to 5.
