IRISH SCONE | |
4 c. flour 4 tsp. baking powder 1/2 tsp. baking soda 1/2 c. sugar 1/2 tsp. salt 1 egg, beaten 1 c. milk 2 tbsp. butter, melted 1 c. raisins Pour boiling water over raisins and let stand 5 minutes. Mix dry ingredients. Make a well in center and add egg, milk and butter. Mix lightly with a wooden spoon. Knead lightly. Fold in drained raisins. Bake in tube pan or iron skillet. Bake in 350 degree oven for 45-50 minutes or until it tests done. I use Aunt Jemima flour and forget baking powder and soda. Also I use 2 loaf pans. |
