CORNISH HENS WITH APPLE GLAZE 
4 (1 lb. each) Cornish hens
1 c. undiluted apple cider concentrate
1/4 tsp. ground cinnamon
1 tbsp. cornstarch
3 lemon slices

Wash and lightly salt the hens and arrange them in a small pan. In a saucepan combine cider, cinnamon and cornstarch. Mix with wire whisk until smooth. Add lemon slices, cook and stir cider mixture over medium heat until it thickens. Brush this glaze over the hens. Roast the hens at 375 degrees for 50 minutes to 1 hour or until they are fork tender, basting with additional sauce several times during cooking. Cut hens in half and serve.
