“OLIVE OIL MAYONNAISE” IS IN:

OLIVE OIL MAYONNAISE 
3 hard cooked yolks
1 tablespoon sugar
1 raw (pasteurized) egg yolk
the juice of 1 lemon
2 teaspoons prepared mustard
2 tablespoons white wine vinegar
1 teaspoon grated onion
1/8 teaspoon pepper
3 teaspoons light extra virgin olive oil

Mash and rub the cooked eggs smooth, add the dry seasonings, then the yolk and the remaining ingredients (except the oil); stir until smooth and add the oil drop by drop, whisking constantly.

Refrigerate until ready to serve.

Tip: Mayonnaise is easily prepared in a blender or food processor; blend ingredients (except oil) then drizzle the oil slowly through the feed tube while processing until the mixture thickens.
