CHICKEN BREASTS PARMESAN | |
1/2 to 1 c. Italian Seasoned bread crumbs 1/4 c. Parmesan cheese (dry) 1 1/2 lbs. boneless chicken breasts 2 eggs, beaten 1 - 2 cans tomato sauce 1 - 2 tsp. dried Italian seasoning 1 tsp. garlic salt 1 c. Mozzarella cheese Combine bread crumbs and Parmesan cheese. Dip chicken first in egg and then in bread crumb mixture. Quickly brown chicken in skillet with oil. Combine tomato sauce, Italian Seasoning and garlic salt. Remove chicken from browning pan to glass pan. Pour sauce over chicken. Bake at 350 degrees for 45 minutes. Remove from oven and sprinkle with Mozzarella cheese. Cover with foil and turn oven down to melt cheese. I suggest covering chicken with foil before baking for 45 minutes. Keeps it tender. Serve with French bread! Serves 4. |
