LOBSTER STEW 
1 cooked lobster (1 1/2 to 2 lbs.), or leftover meat
3 tbsp. butter
1 qt. milk
Salt
Pepper
Onion salt
1/4 c. sherry (optional)

Remove lobster meat from the shell and cut into 3/4" cubes. Melt butter in large, heavy pan and add lobster. Cook slowly for 5 minutes, stirring constantly. Add milk very slowly, always stirring. Heat slowly, but do not boil. Season to taste. Let it set for a while then when ready to serve reheat. Do not boil. A bit of sherry may be added, if desired. Be sure to do ahead.
