LOW-SODIUM CREOLE OVEN-FRIED
CHICKEN
 
1/2 frying chicken
White pepper
1 c. flour
Vegetable cooking spray
1/4 tsp. ground thyme
1/2 tsp. paprika
1/4 tsp. granulated garlic

Preheat oven to 375 degrees. Remove skin from chicken; cut into pieces and season with white pepper. Place flour in bag or bowl. Mix in last 3 ingredients. Shake chicken in bag of flour mixture. Remove and shake off excess flour. Spray baking pan with vegetable cooking spray. Place chicken in pan. Bake 45 minutes or until done. 1/2 chicken = 2 servings.
