PEANUT BRITTLE 
3 c. sugar
1 c. corn syrup
1 c. water
1 lb. Unroasted peanuts
1 tbsp. baking soda
1/4 tsp. salt
1 tsp. vanilla
2 tbsp. butter

Mix first 3 ingredients in saucepan and cook on stove top until candy thermometer registers 250 degrees.

Add 1 pound Unroasted peanuts and cook to 300 degrees.

Mix next 3 ingredients and add to candy and stir slightly. Add 1 tablespoon baking soda.

Butter 2 cookie sheets and one other pan. Pour candy in circles on pans, but don't spread with spoon. Turn over in pan when cooled. This allows peanuts hopefully to be in middle of candy.

May have to use spatula to loosen. Break in pieces.
