MICROWAVE PEANUT BRITTLE 
1 1/2 tsp. baking powder
1 tsp. water
1 tsp. vanilla
1 1/2 c. sugar
1 c. light corn syrup
3 tbsp. butter
1 lb. peanuts (raw)

Combine baking soda, water and vanilla in small bowl and set aside. Place sugar, water and corn syrup in a 3 quart glass measuring cup and blind. Heat uncovered on full power 20 minutes or candy thermometer at 240 degrees if thermometer isn't available drop small amount in cold water it should form a soft ball. Stir with wooden spoon grease 2 cookie sheets and warm in oven at 250 degrees while peanut mixture is heating.

Stir reserved baking soda mixture into hot candy mixture. Pour onto cookie sheet 1/4 inch thick let cool and break in pieces.

Since microwave ovens vary in power, you may need to adjust your cooking time.
