BREAKFAST MUFFINS 
1 egg
1/4 c. sugar
1/4 c. melted butter
1 3/4 c. sifted flour
1/4 tsp. baking powder
1/2 tsp. salt
1 c. skim milk or buttermilk

Beat egg; mix in sugar and melted butter. Sift together flour, baking powder and salt. (Also 1/8 teaspoon baking soda, if using buttermilk.) Add to sugar and butter mixture alternately with milk. Fill greased muffin cups 2/3 full. Bake in 375 degree (moderate) oven about 20 minutes or until golden brown. Makes 14 to 16 small muffins.
