IRISH POTATOES 
1/4 lb. butter
8 oz. cream cheese
2 lb. box confectioners' sugar
16 oz. coconut
1 1/2 tsp. vanilla
1/2 tsp. salt

Soften butter and cream cheese in microwave. Beat in sugar until creamy. Add vanilla, salt, and coconut. Let set until you can roll into balls. Roll in cinnamon.

Since microwave ovens vary in power, you may need to adjust your cooking time.
