CHICKEN ENCHILADA 
1 chicken, cooked and cubed
1 sm. sour cream
1 can tomato soup
1 can cream of chicken soup
1/2 onion, diced
1 1/2 c. taco sauce or to taste
1 tsp. Tabasco sauce

Mix all together. 1 lb. cheddar cheese

Put chicken mixture on tortillas; add cheese and put in a deep casserole. Layer tortillas until mixture is all used. Bake approximately 1 hour at 350 degrees; add additional cheese last 5 minutes of baking time.

Serve with taco chips and lettuce salad and your meal is complete.
