ROGER'S TEXAS JALEPENO POPPERS 
Tastes great warmed up the next day for breakfast!

jalapenos
cream cheese
bacon
sausage (Jimmy Dean's or Owens)
Cajun seasoning
metal skewers

Cut off both ends of jalapeno. Cut lengthwise, de-seed and de-vein. Rinse. Cut into 3/4 to 1-inch bite-sized pieces.

Make small bite-sized spheres of sausage. Dust lightly with Cajun seasoning. Too much seasoning will make them too salty!

Fry sausage, until cooked. Drain on paper towels to remove grease and set aside.

Cut package of bacon strips in half.

READY TO ASSEMBLE:

Place a piece of bacon on cutting board. Add piece of jalapeno. Add small amount of cream cheese. Add piece of cooked sausage. Wrap with bacon and place on skewer.

Place on a hot barbecue grill, until bacon is done. Turn as needed to cook the bacon. A little flame-up helps crisp the bacon.

Substitutions: Shrimp, beef, pork, or chicken - any meat you want. Be sure to cook the meat that goes inside prior to barbecuing.
