BANANA CUPCAKES 
1/2 c. shortening
1 1/2 c. sugar
2 eggs
2 c. flour
1/2 tsp. baking powder
3/4 tsp. baking soda
1/4 tsp. salt
1/2 c. buttermilk
1 tsp. vanilla extract
1 c. (heaping) mashed bananas

Cream shortening and sugar in bowl until light and fluffy. Beat in eggs. Add mixture of dry ingredients alternately with buttermilk, mixing well after each addition. Add vanilla and bananas; mix well. Fill greased muffin cups 2/3 full. Bake at 350 degrees for 20 minutes or until light brown. Remove to wire rack to cool. Frost with favorite frosting. Yield: 24 servings.
