LEMON BEET SALAD 
1 pkg. lemon gelatin
1 c. hot water
3/4 c. liquid from canned beets
3 tbsp. vinegar
1 tbsp. horseradish (if desired)
3/4 c. diced cooked beets
2 tsp. grated onion
1/2 tsp. salt
Mayonnaise

Combine gelatin and water. Add beet liquid, vinegar, salt and onion (and horseradish). Chill until partially set. Fold in beets. Pour into mold and chill. Serve with mayonnaise.
