MOZZARELLA POTATO PIE 
6 lg. potatoes
8 oz. Mozzarella cheese, sliced
2 eggs, beaten
3 strips bacon
1/2 c. grated Italian cheese
1/2 tsp. parsley flakes
Salt and pepper to taste

Peel potatoes; boil (or pressure cook 10 minutes); mash them. Add salt, pepper, parsley, and beaten eggs. Stir well. Then add the grated cheese. Stir in well. Grease a 2 quart glass baking dish with any oil, butter, butter, etc. bottom and sides. Sprinkle with bread crumbs to cover dish. Scoop half potato mixture into dish. Layer with sliced Mozzarella; add the rest of the potato mixture. Top with strips of bacon.

If you omit the bacon strips, brush top with melted butter, butter, or oil - about 2-3 tablespoons. Bake at 350 degrees until golden brown and crusty. Serves 6-8.
