SKILLET BARBECUE PORK CHOPS 
4 to 6 pork chops
1 tbsp. salad oil
1/3 c. chopped celery
2 tbsp. lemon juice
2 tbsp. brown sugar
1/2 tsp. dry mustard
1/2 tsp. salt
1/8 tsp. pepper
1 c. ketchup
1/2 c. water

Brown chops in oil. Drain off fat. Sprinkle other ingredients over chops. Pour ketchup and water over all. Another cup of ketchup might be necessary. Cover and let simmer over low heat about 1 hour or until tender.
