SKILLET BARBECUED PORK CHOPS 
4 to 6 chops
1 tbsp. vegetable oil
1/3 c. chopped celery
2 tbsp. lemon juice
2 tbsp. brown sugar
1/2 tsp. dry mustard
1/2 tsp. salt
1/8 tsp. pepper
2 (8 oz.) cans tomato sauce

In a large skillet with a tight-fitting lid, brown chops in oil over a medium heat, approximately 5 minutes on each side. Drain off excess fat. Sprinkle celery, brown sugar, lemon juice and seasonings evenly over chops. Pour tomato sauce over all. Cover, simmer over low heat 1 hour or until chops are tender.
