GRANDAD'S VEGETABLE SOUP 
1 lb. bacon, diced
1 lg. onion, diced
3-4 potatoes, diced
1 pkg. frozen mixed vegetables
1 clove garlic, diced
1 lg. can stewed tomatoes
1 qt. tomato sauce or juice
Parsley flakes
Salt
Pepper
Water as needed

Fry bacon until crisp, drain well. In large kettle add vegetables, cover with tomato sauce using enough water to cover. Bring to boil, reduce heat; simmer until potatoes are soft (45 minutes to 1 hour). Add seasonings to taste, adding more liquid if needed.

Note: Add bacon with vegetables.

Any vegetables may be used. You may use leftovers in the refrigerator as desired.
