CHICKEN IMPERIAL 
1 frying chicken cut into pieces
Salt and freshly ground black pepper
2 c. Italian bread crumbs (use a day-old loaf of Italian bread with crust; crumb in blender or food processor; crumbs should be coarse.)
1/4 c. coarsely chopped fresh parsley
1/2 c. grated Parmesan cheese
1 stick butter of choice, melted

In a large bowl mix bread crumbs, parsley and grated cheese. Wash and dry chicken, then sprinkle lightly with salt and pepper. Dip chicken pieces into melted butter, then into crumbs, coating well by pressing lightly to make the crumbs stick.

Place the chicken, meaty side down, in a baking pan. Bake for 30 minutes at 350 degrees. Turn chicken and continue to bake until golden brown and tender, about 30 more minutes depending on the size of the chicken. Transfer to a platter and garnish with fresh parsley. Serves 4-5.

Packages bread crumbs are not recommended.
