IRISH CHICKEN 
3 tbsp. butter
2 med. onions, chopped
2 c. cooked chicken chunks
2 c. diced cooked potatoes
1 c. half and half
2 tsp. salt
1/4 tsp. pepper
Buttered fresh bread crumbs
1/2 lb. fresh mushrooms

Wash mushrooms and cut lengthwise. Fry onions in butter until brown. Mix chicken, potatoes, onions, salt, pepper, and half of cream; toss and cover. Refrigerate overnight.

Next day before cooking add rest of cream and mushrooms. Toss; cover with bread crumbs. Bake at 350 degrees for 30 minutes.
