SOUVLAKIA 
2 lbs. boneless lean lamb or pork
1/3 c. olive oil
3 tbsp. lemon juice
1 lg. onion, chopped
1 to 2 cloves garlic, crushed
2 bay leaves, crumbled
2 tsp. oregano
1 tsp. salt
1 tsp. pepper
12 wooden or metal skewers

Cut meat into 1 inch cubes. Marinate meat in mixture made from the remaining ingredients in a glass dish for 2 hours. Divide meat evenly on 12 wooden skewers that have been soaked in water for 1 hour to prevent burning or use metal skewers. Grill meat about 4 to 6 inches above the coals for 12 minutes, turning once. Serve with warm pita bread or sliced Italian bread. Serves 6.
