QUICK OATMEAL COOKIES 
3 1/4 cup quick oats
3/4 cup butter
3/4 cup sugar
1 tsp. vanilla extract
A generous handful of raisins
1/2 cup chopped walnuts (optsp.)

Work all ingredients together with fingers until blended. Press into small balls on a cookie sheet. Flatten each one with a moistened fork, dipping the fork in water each time to prevent sticking.

Bake about 15 minutes or until lightly browned in a 350°F oven. Let cool on cookie sheet for a minute or two then remove with spatula.
