BRAN MUFFINS 
2 c. Bran Flake cereal with raisins
2 c. whole wheat flour
2 tsp. baking powder
2 tsp. baking soda
2 c. buttermilk
1/2 c. honey
1/4 c. vegetable oil
2 lg. eggs
Apricot preserves, to taste

Preheat oven to 375 degrees. Grease six (3 inch) muffin cups. In large bowl combine Bran Flakes, flour, baking soda and baking powder. Add buttermilk, honey, oil and eggs and stir until blended.

Spoon batter into prepared muffin cups and bake 20-25 minutes, or until toothpick inserted into center comes out clean. Place muffins on firm on wire racks to cool. Serve with apricot preserves and seedless grapes.
