CALIFORNIA RED BEANS AND RICE 
1 bag dry red beans
1 ham bone
1 onion, chopped
Water to cover
1/2 c. brown sugar
1/3 c. vinegar
1/2 c. salsa to taste
Cooked rice

Rinse red beans and place in large pot or crockpot. Place in ham bone and one chopped onion. Cover with water and cook on low heat until meat is tender and falls off ham bone, 4 to 5 hours. Remove bone and add brown sugar and vinegar and salsa to taste. Serve over cooked rice.
